RED WINES
MERLOT RED WINE
Characteristics: Merlot prefers hilly soils, fatty and rich in clay, with good humidity during the summer since it does not like drought very much. It is a vine with remarkable vigor and high productivity. The wines resulting from this grape variety are velvety reds, intense and ruby red in color.
On the palate, Merlot wine is smooth, juicy and enveloping, it has a good structure, a balanced acidity and a well-defined but at the same time thick, velvety and round tannin, made even smoother with aging.
Pairings: Merlot is an all-round wine: appetizers with cured meats, blue or medium-long aged cheese, meat-based first courses, risottos with porcini mushrooms or radicchio, roasts, boiled, grilled, white and red meats, game.

CABERNET RED WINE
Characteristics: Cabernet gives rise to a wine of a very intense ruby red color, often impenetrable, with purplish, almost blue nuances.
On the palate, it is warm, ample and full-bodied; it has an excellent structure and the tannins masterfully envelop the mouth, thanks to the high amount of polyphenolic substances in the skin.
Being a medium-late ripening vine, it needs a lot of sun in order to reach full ripeness; it loves gravelly and well-drained soils, which allow its roots to penetrate deeply. It is moderately vigorous and with a good, constant production.
Pairings: Cabernet lends itself to many pairings but meat is certainly one of the best: spicy and aromatic game, such as wild boar, roe deer, pheasant; fatty and rich dishes such as roasts, braised meats, sauces and dips; but also more summery dishes, such as grilled pork.

ANCELLOTTA RED WINE
Characteristics: This wine is characterized by a very intense color. The grape leaves are pentagonal in shape, the bunch is medium sized and pyramidal while the berries are large and spherical, with thick, sizeable blue-black skins.
The wine has a very bright ruby red color, but when aged it tends to orange. It is smooth and sweet on the palate, with hints of red fruit. Ancellotta grapes have a sweet taste, for this reason it is used to give wines a sugary note.
Sparkling, sweet and fruity, these are the characteristics of the wine produced with this grape.
Pairings: This wine is easily paired with appetizers and meat-based dishes.
